Cooking with Fire-Roasted Italian Sweet Peppers

There's little better than the smoky-sweet deep flavor of a roasted pepper. This time of year when peppers are in full bloom, it's important to stockpile these beauties for the dead of winter. Right now, HHF has fire-roasted Italian sweet peppers for sale (the BEST varieties of sweet peppers too... carmen and escamillos... such incredible flavor). There are so many uses for roasted red peppers and can be thrown in basically an recipe that calls for sweet peppers, but below are a few I've used that are particularly compelling.
Recipes Featuring Fire-Roasted Italian Sweet Peppers
Roasted Red Pepper and Feta Cornbread - Simply the BEST cornbread I've ever made and the fire-roasted peppers really give it that extra flavor. this recipe is rather forgiving too, I've substituted cooked onion or shallot in place of scallions (but scallions are really nice for the color).
Romesco Sauce - A hearty, nutty red sauce that forgoes tomatoes for the bright flavor of roasted peppers.
Roasted Pepper, White Bean and Mozzarella Salad - For when you're missing the tomatoes salads of summer, this easy meal places roasted red peppers as the bright winner.
Roasted Red Pepper Hummus - This is simply a really nice treat to be able to make at home, just as great for weekly lunches as an early fall hummus plate.
Roasted Red Pepper Chickpea Curry - Such an easy weeknight meal if the peppers are already roasted — throw it all in the instant pot (this is also easily adaptable to a stovetop).
Roasted Red Pepper and Tomato Soup - There are a million red pepper tomato soup recipes, but I like this one because it calls for fresh tomatoes and employs plenty of garlic. i do like to top this with a splash of cream or sour cream to add a little richness to a rather acidic meal.
Not a full recipe, but roasted red peppers are an incredible addition to an Italian sub style sandwich. If you want to go above and beyond, this is a great recipe for homemade sub rolls.
