Greek Beef Meatballs

Serving Size


  • 1 pound ground beef (preferably local & organic 🙂
  • 1/8 cup chopped fresh oregano
  • 1/8 cup chopped fresh mint, leaves only (in your share weeks 1 & 2)
  • ½ cup finely minced parsley
  • 3 cloves garlic, minced (can substitute garlic scapes)
  • 1 chopped red or green pepper
  • 2 teaspoons lemon or black pepper
  • 2 teaspoons salt
  • 1 cup crumbled feta or parmesan or goat cheese
  • 2 teaspoons lemon juice

Recipe Directions

  1. Preheat the oven to 350 degrees.
  2. Mix the ground beef, oregano, mint, parsley, garlic, green or red pepper, lemon or black pepper, salt, cheese, and lemon juice together in a large bowl, blending in the cheese until no large crumbles remain.
  3. Using a 2-ounce scoop (1/8 cup) to measure, roll into 16 balls and place on a large baking pan.
  4. Bake for about 25 minutes, or until the outside of the meatballs brown and the center is cooked through.
  5. Once cooked add any pasta sauce you like and serve over risotto or other pasta.
