Kale Salad w/ Lemon-Parmesan Dressing

Serving Size


  • 8 cups kale, stems removed, finely chopped
  • 3 tblsp. freshly squeezed lemon juice
  • 1/2 tsp. Dijon mustard
  • 1/2 tsp. salt
  • 3 tblsp. extra virgin olive oil
  • 3 tblsp. finely grated Parmesan cheese

Recipe Directions

  1. Place kale in a large salad bowl.
  2. In small bowl, whisk together lemon juice, Dijon, salt and olive oil.
  3. Whisk until well blended.
  4. Pour over greens and toss to coat evenly.
  5. Sprinkle with Parmesan cheese; toss to coat evenly.
  6. Serve!
