Katie's Buttercup Squash Creation

Ingredients:
1 Buttercup or other sweet, orange winter squash
5 pieces fried bacon (crispy)
1 bunch (~6-8 stems) Kale (preferably Red Russian or Dinosaur variety)
1 medium to large clove of garlic (optional)
 Salt and Pepper to taste

Directions:
Preheat oven to 325 degrees.  Cut squash in half, scoop out seeds and discard in compost, place halves facing down in baking dish.  Add ~1 inch of water to pan.  Bake for ~45min or when flesh is soft.  While squash is baking prepare the kale: rinse, steam until soft but not mushy, then dice.  Fry the bacon then crumble.  Mince the garlic.
When squash is finished cooking, carefully turn the halves over and scoop flesh from skin into a bowl.  Add all other prepared items and gently stir together.  Serve hot and enjoy!

One note about winter squash....  There are multiple different varieties of winter squash, all with varying levels of sweetness.  For this recipe, choose the most naturally sweet variety that you have at hand.  As there are only a few ingredients the higher quality squash the better.
