Khyar b’Laban (cucumber and yoghurt salad)

Serving Size

Ingredients

  • 1 or 2 small cucumbers
  • 1 cup nonfat yogurt
  • 1 clove garlic
  • 1 or 2 small cucumbers
  • 1 cup nonfat yogurt
  • 1 clove garlic
  • ½ teaspoon dry mint or equivalent of fresh
  • salt to taste

Alternate version of recipe Ingredients:

  • 1-2 cloves garlic
  • 1 teaspoon salt
  • 1 tablespoon dry mint or 3-4 fresh stems and leaves
  • 1 quart plain yogurt
  • 2 large or 4 smallish cucumbers

Recipe Directions

  1. Pound garlic with salt and mint and mix into yogurt.
  2. Add chopped cucumbers and serve alone or with added garbanzo beans and pita bread that has been toasted.

Alternate version of recipe directions:

  1. Mash garlic with salt and mint.
  2. Add yogurt and blend well.
  3. Cut cucumbers in half lengthwise (can peel if desired) and then slice thinly horizontally.
  4. Add cucumbers to yogurt mixture.
  5. Fold together gently.
